  • Scallion & Wild Rice Tartlets

  • (Serves 8)
INGREDIENTS:
2 cups wild rice, cooked
2 eggs
2 tbsp half and half
1 cup scallions, chopped
1 tsp dry mustard
1 tsp sesame seeds
Salt and pepper to season
2 tbsp butter, melted

PREPARATION:
Preheat oven to 350°. In a large bowl, mix together rice, eggs, cream, scallions, mustard, and sesame seeds. Season with salt and pepper. Place 12 silicone mini baking cups onto a baking sheet, scoop 1 tbsp of rice mixture into each, then press down with back of spoon. Bake for 20 minutes. Serve with our family's “secret sauce" - 1 part soy sauce mixed with 2 parts of sour cream. Garnish with a scallion slice.
