INGREDIENTS:
4 tbsp olive oil 4 tbsp butter 2 onions, diced 2 garlic cloves, minced 10 oz wild rice (1 package) 4 cups chicken broth 1 cup dry white wine ½ cup fresh basil, finely chopped ½ cup fresh flat parsley, finely chopped 2 tbsp lemon zest 1 cup Pecorino Romano cheese, grated Kosher Salt & freshly ground black pepper to taste PREPARATION: Saute garlic and onion in oil and butter for one minute. Add wild rice, chicken broth, and wine. Bring to boil then cover, reduce heat, and simmer for one hour. Drain excess liquid. Add basil, ¼ cup parsley, lemon zest, and ½ cup cheese. Season with salt and pepper. Let stand for ten minutes covered. Serve hot in a bowl. Top with remaining grated cheese and chopped parsley. |
