INGREDIENTS:
10oz bag Brown & Wild Rice Fusion, cooked 1 boneless skinless chicken breast, poached then chopped ¼ cup chopped sun-dried tomatoes 2 tbsp pesto sauce ¼ cup olive oil for drizzling Fresh chopped basil for garnish Grated Pecorino Romano cheese for garnish Salt and pepper to season PREPARATION: In a large bowl, mix together rice, chicken, tomatoes, and pesto. Drizzle with olive oil, top with basil and grated cheese. Season with salt and pepper and serve. Make ahead and keep it in your refrigerator to enjoy it all week. |
